Sweet chilli chicken Kiev

Philadelphia Light with Sweet Chilli

Cut a little pocket into each chicken fillet, being very careful not to cut all the way through the meat. Season the fillets with salt and black pepper.
Stuff each of the pockets with Philadelphia with Sweet Chilli. Close by securing each with one or two cocktail sticks.
Tip the flour, eggs and breadcrumbs into separate shallow bowls. Coat each fillet in flour, then egg, then breadcrumbs, then dip back into the egg and finally the breadcrumbs.
Preheat the oven to 200 °C/180 °C fan/gas mark 6.
Heat the oil in a large pan over a high heat. When hot, turn the heat to medium and cook the Kievs for 2-3 minutes on each side until golden brown.
Transfer the Kievs to a baking tray and bake for 25 minutes. Serve immediately, making sure to warn people about the cocktail sticks!
