Mini Oreo Cheesecake

  • 400 g Philadelphia Light
  • 75 g caster sugar
  • 2 medium eggs
  • 12 OREO cookies (132g)
  • 50 g dark chocolate, melted


  • Preheat oven to 180oC, Gas Mark 4. Beat Philadelphia and sugar in a large bowl until well blended. Add eggs, one at a time, stirring after each addition just until blended.
  • Place 1 cookie in botttom of each 12 paper cake cases in a bun tin. Fill evenly with batter.
  • Bake 18-20 minutes or until centres are almost set. Cool. Refrigerate 3 hours or overnight for best results. Drizzle with melted chocolate before serving.


  • For a healthier topping serve with slices of fresh fruit e.g. strawberries or peaches, instead of melted chocolate.
